2 tablespoons crushed toasted walnut or almond
2 cups baby spinach
4 slices swiss cheese
4 flour tortillas or wraps
Mix the mandarin zest, yoghurt and mayonnaise together in a small bowl.
Combine mandarin chunks, celery and nuts together in another bowl.
Spread the mayonnaise on each tortilla and layer each with the spinach, sliced turkey, cheese and mandarin fruit mixture. Roll up tightly and cut into desired length.
Alternately you can use shredded cooked chicken breast or leftover roast chicken instead of turkey breast or leave out for a vegetarian option.
