Superfood Mandarin Salad

  • 500g mixed salad leaves, washed
  • 200g baby spinach leaves, washed
  • 1 punnet cherry tomatoes, sliced
  • 2 Delite mandarins, peeled and sliced or segmented
  • 1 Avocado, halved, stone and skin removed, sliced
  • 1 tablespoon chia seeds
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds
  • handful of roasted almonds


  • Finely grated rind and juice of 2 Delite mandarins
  • ¼ cup olive oil
  • ¼ cup sweet chilli sauce
  • 2 cloves garlic, crushed
  • 1 fresh birds eye chilli, seeded and sliced on the diagonal
  • 2 tablespoon fresh coriander including stalks, roughly chopped
  • 2 tablespoon sesame seeds, roasted
  • sea salt and freshly ground black pepper, to season


Combine all the salad ingredients together in a large salad bowl and set aside while you prepare dressing.

Whisk dressing ingredients  in another bowl, then pour over the salad and gently toss just before serving.
