Mandarin Granola Parfait


Mandarin compote:

·       2 Delite mandarin, peeled and chopped

·       Zest of 2 Delite mandarins

·       2 tablespoons of honey

 Macerate fruit:

·       ½ cup Delite mandarin juice

·       2 Delite mandarins, peeled and segments cut into small chunks

·       1 punnet blueberries


1 cup granola

2 cups yoghurt or coconut yoghurt


  1. Make mandarin compote by placing chopped mandarins, zest and honey in a pot and bring to a boil until the fruit breaks down a bit, cool. This can be prepared in advance.
  2. Combine the mandarin segments, juice, compote and blueberries, leave to macerate for 10 minutes.
  3. Put some granola at the bottom of each serving glasses, followed by yogurt and fruit layer them and top with extra yogurt and fresh fruit to garnish.
